South-Indian style tangy lentil vegetable stew
Makes: 250g dal
200g vegetables of choice
250g arhar dal/toor dal
Heat 8 tbsp oil in a pressure cooker. Sauté 200g vegetables (egg plant, carrot, bottle gourd, beans, drum sticks) for 4 – 5 minutes on medium heat. Add 50g Nimkish Sambar Masala and sauté for 2 – 3 minutes. Now add 250g arhar/toor dal (lentils) with 5 – 6 cups water and close the lid. Turn to high heat till first whistle, now turn to low heat and cook for another 20 minutes. Serve with hot rice, idle, dosa, uttapam or vada.
